We like to think of ourselves as boundary-pushers. We've used a lot of different ingredients to make very complex beers, so we thought, “What would push our boundaries further than pulling back and making a stout with Bourbon barrels... and nothing else?” This concept was a big departure for us.

Once we decided to go this route, we knew we needed to get it right. The beauty of The Wolf is in its simplicity.

We started with high quality malt (100% Briess malt) to create a stout that could blend and marry well with the high quality Bourbon barrels. At the end of the day that's what beer like this is all about: thoughtfully using high-quality ingredients to create balanced and delicious beer. Because, with only having two elements to work with, you have nothing to hide behind. If you don’t dial in everything just right, it’s very obvious. And I may be a bit biased, but damnit if we didn’t do just that.
